« At the table, I don't have to choose between good food and the people who make it. With all four of our producers, the two go together. »
— Teresa Sofia, owner of Gourmethica

The four houses

  1. Libera Terra

Libera Terra’s pasta, tomatoes and preserves come from a network of social cooperatives whose farmland includes land confiscated from the mafias. Back under cultivation, and farmed organically, this land now provides a livelihood and has been returned to social use.

  2. Pasticceria Giotto

Giotto’s classic panettone is made with a natural sourdough starter and takes 72 hours to make. The bakery also makes colombe for Easter and savoury biscuits. Since 2005 its workshop has been inside Due Palazzi prison in Padua, where master pastry chefs teach their craft through real commercial production.

  3. Cotti in Fragranza

Cotti in Fragranza’s Picciottelli are short grissini for the aperitivo. The social enterprise began in 2016 inside the Malaspina juvenile detention institute in Palermo. It trains young people at risk of exclusion and helps them find work. It also works beyond the institute, including in Casal di Principe.

  4. La Madre Terra

The extra virgin olive oil that Gourmethica offers comes from Puglia; sauces, pestos and preserves complete the range. La Madre Terra is the organic brand of La Pietra Scartata, the workshop of the La Fraternità cooperative in San Clemente, near Rimini. People with and without disabilities work there alongside skilled staff and educators.

The last mile
