Pasta, here, is not a mere side. Ours is born from organic durum wheat grown on Sicilian land reclaimed from the mafia by the Libera Terra cooperatives — bronze-drawn, slowly dried, for that texture that holds the sauce. To eat this pasta is to support another idea of farming.
