Passata from dry-farmed siccagno tomatoes. Dense, intense, no added water.

Dry farming — siccagno — deliberately withholds water from the plant: the tomatoes grow slower and smaller, concentrating a sugar and acidity in their flesh that no irrigated tomato reaches. The result is a deep-red, dense passata where a single spoonful seasons a whole pot. Simmer it for a few minutes with garlic gilded in extra virgin olive oil and a little basil and the sauce is ready, coating our Libera Terra spaghetti with nothing else added. Grown and bottled by the Libera Terra social cooperatives on Sicilian land confiscated from organised crime. Only organic tomatoes and a little salt — no water, no concentrate, no preservatives.
