What makes a good grissino
Professional training
Young people in detention learn a real trade in a professional workshop.
Local zero-kilometre ingredients
Sicilian citrus, local olive oil, selected flour — no artifice.
Sicilian craftsmanship
Each grissino is shaped by hand, in the pure Sicilian baking tradition.
A well-made grissino has something irreducible: a texture that crunches, an unexpected lightness, an olive oil flavour that lingers just long enough. Cotti in Fragranza makes its grissini the way you make something you are proud of.

The Picciottelli line brings together grissini, crackers, frollini with Sicilian citrus and artisanal chocolates. All are made from zero-kilometre local ingredients — selected flour, extra virgin olive oil, Sicilian citrus — without artificial flavourings. The shaping is manual, the baking precise. These are products designed for the aperitivo: that moment when well-executed simplicity is worth more than any artifice.
Cotti in Fragranza was born in 2016 at the Malaspina youth detention centre in Palermo, driven by the Rigenerazioni cooperative. In this workshop, young inmates learn a real trade — not a simulation, not a filler activity. Real bakery work, with professional standards and matching pride. Their own motto says it all: « Se non li gusti non li puoi giudicare. » You cannot judge them without having tasted them. They are right.
