Ingredients
For 4 servings
- 4 ripe but firm pears
- 250 g ricotta
- 40 g walnut halves
- 2 tbsp acacia honey
- 1 tbsp lemon juice
- 3 tbsp water
- 10 g butter
Method
4 steps, simply.
Prepare the pears
Heat the oven to 180 °C, conventional heat. Halve and core the pears and place cut-side up in a baking dish.
Roast
Drizzle with lemon juice, dot with butter and add the water to the dish. Roast for 20 minutes, then spoon the juices over the pears.
Add the honey
Drizzle 1 tbsp honey over the pears. Roast for another 5 minutes, until a knife slips in easily. Allow a little longer for firmer fruit.
Serve
Serve two pear halves per person with the ricotta. Add roughly chopped walnuts, the cooking juices and the remaining honey.

Should I peel the pears?
No, the skin helps them hold their shape. Wash thoroughly and remove any damaged parts.
Can I replace the walnuts?
Yes, with toasted almonds, or simply leave them out. Check ingredient labels to suit your guests' needs.
